Answer:

The mounds, or mini-terraces in alberizo soil created before the rainy reason to enable the soil to absorb as much of the rain water as possible. The aserpio is broken up each April-May and the soil flattened to allow it to create a top crust that prevents evaporation of the water in the soil.
