Acid conditions allow the denaturation of proteins, so that the amino acid chain can be exposed and hydrolyzed by pepsin. It also breaks apart the extracellular matrix that holds cells together in tissues. Moreover, acid conditions convert inactive pepsinogen secreted by chief cells into pepsin AND it helps to control pathogens in ingested blood
