I. Gelatin is obtained by the partial hydrolysis of collagen obtained from the skin, white connective tissue and bones of animals. II. Although gelatin is insoluble in cold water, it does soften through the absorption of up to ten times the weight of the water. III. Gelatin is soluble in hot water and in warm gastric fluid; a gelatin capsule rapidly dissolves and exposes its contents.
