What is acetylation?

Addition of acetyl group from acetyl CoA into amino acids by N-acetyl transferase (controlled by NAT1 and NAT2 genes) where they conjugate the acetyl into aromatic amine or hydrazine groups becoming aromatic amides and hydrazides.
